Healthy Keto Trail Mix with Chocolate Nut Clusters

every summer we go camping with a bunch
of friends and family on the lake we spend the entire day on the water just
swimming and wake surfing when you're out on the boat all day it's hard to
find convenient snacks to bring I love trail mix and decided to make a keto
version to share for your upcoming summer adventures this recipe has chunky bits of keto
clusters in it and to make those clusters we're using pork rinds as a
base break them up into smaller pieces until you have about 2 cups worth then
add 1 cup of pecans 1 cup of sliced almonds 2 tablespoons of hemp Arps and
stir that all together pour about 1 tablespoon of coconut oil
to 6 ounces of cocoa butter and microwave it in 30 second bursts until
the cocoa butter has melted then whisk in a half a cup of
confectioner's swerve mix it up real good until the sugar has dissolved and add one tablespoon of heavy cream
mix that up as well pour it over the pork rain mixture and
stirred up once all the porky chunks are covered in
cocoa butter spread it out on a baking sheet lined with parchment paper and
freeze for about 15 minutes until it's hardened meanwhile add about a cup of each
pumpkin seeds macadamia nuts toasted coconut flakes half a cup of pecans a 1
cup of sugar free chocolate chips I use Lily brands chocolate chips because
they're sweetened with Geritol and stevia instead of regular sugar once the
pork rind mixture is hardened break it up into bite-size clusters and add it to
your nut and seed mixture give it one final stir and now it's time
