Welcome to Siri's Medi Kitchen Today we will see the preparation of two healthy lunch box recipes These are Palak Paratha and Carrot Rice Vitamin A is abundantly present in both Palak and Carrot Hence it is good for eyes If children use these two frequently, their brain will sharpen For the preparation of Palak Paratha, Turn on flame and keep a vessel on it. Pour 250 ml of water into it After water boils, keep in low flame and add 150 gms of Palak (cleaned, washed and dried) Cover and boil in low flame for 3 minutes After 3 minutes, open the lid and transfer the Palak into a strainer After cooling, keep the Palak into blender Add 1 tbsp of water (in which Palak boiled) to the Palak and blend it. Add 200 gms of wheat flour and blended Palak into a bowl Add 1/2 tsp of chilli powder, 1/2 tsp of carom seeds (ajwain), 1/4 tsp of turmeric powder, 1/2 tsp of coriander powder, 1/2 tsp of cumin powder, 3/4 tsp of salt ( you can adjust according to tour taste) to the bowl Add water (in which Palak boiled) to the blender, mix and add to the bowl Mix it well Add little water at a time and knead the flour into dough Now dough is ready Add 1 tbsp of oil and mix it well Knead with hands like this to make the dough smooth Cover it and keep aside for 15 minutes After 15 minutes open the lid Now dough is ready Wheat flour for dusting is ready Take a lump from the dough and roll into ball shape Press like this, dusting both sides with wheat flour and roll it into Paratha Six parathas can be made using this dough.
Made second Paratha also in the same manner We will fry these two Parathas Turn on flame, heat the pan and keep the Paratha on it Keep it in medium flame for 5 to 6 seconds, flip it to the other side and apply oil or ghee Cook it for 3 to 4 seconds, flip it and apply oil or ghee to other side also Keep flipping, cook the paratha till it cooks properly from both the sides Keep the paratha on the tissue paper Tissue paper absorbs the extra oil from paratha Cook two parathas like this and keep in lunch box Keep raita, mushroom curry and few nuts as side dish I already upload Mushroom Curry video Look at the link in the description box Second lunch box recipe is Carrot Rice Turn on flame and heat 2 tbsp of oil in a pan Once the oil is hot, add 1 bay leaf, 2 cardamoms, 3 cloves, 2 cinnamon sticks and fry for 30 seconds Fry until they emits nice aroma Now add 1/2 tsp of cumin seeds, 1 tsp of urad dal, 1 tsp of gram dal, 1/2 tsp of mustard seeds and fry for 30 seconds Add 3 slitted green chillis, 10 curry leaves, 2 spoons of cashew nuts and saute for 1 minute Now add 1 tsp of grated ginger and mix it for 30 seconds Add 3 tbsp of chopped onions and saute it for 2 minutes When onions change their colour lightly, add 1/2 cup of grated carrot and mix well Fry it for 2 to 3 minutes in low flame only If we take carrots frequently, it controls hair fall and gives healthy skin Now add 1 cup of steamed rice Season with salt Mix well Fry for 1 minute Add few chopped coriander leaves and mix it Now Carrot Rice is ready Shift it into serving bowl Keep it in lunch box along with Kiwi fruit slices and chocolate cup cake Try these recipes and write your feedback in comment section If you like this recipe, click the like button present below this video Share to your friends and relatives Like my videos in facebook and instagram Do not forget to subscribe my channel
